– Institutionalization of Hygiene Management in Accordance with HACCP –
Various methods for food hygiene management exist in the world. In recent years, the environment surrounding the food industry both domestically and internationally has increasingly emphasized the importance of food safety, reliability, scientific evidence, and ensuring transparency. HACCP (Hazard Analysis and Critical Control Points) has already been introduced in many countries, primarily in advanced nations, as a “global standard guideline for food hygiene,” with a trend towards mandating hygiene management in accordance with HACCP. In Japan, HACCP has been institutionalized with the revision of the Food Sanitation Law, and HACCP has become fully mandatory in June 2021.
